Firecracker Enchiladas

Ingredients:

1 pounds, ground beef
1/2 large onion, chopped
1 tablespoons chili powder
1 teaspoons ground cumin
1/2 teaspoon salt
About 8 ozs. can ranch-style beans
3 corn tortillas
¾ cups shredded Jack cheese
¾ cups shredded Cheddar cheese
1/2 (10-ounce can) diced tomatoes and green chilies 1/2 (10 3/4 ounce) can cream of mushroom soup, undiluted
I added 1 ear fresh corn, ½ a red sweet pepper & cilantro.

Directions:
Cook the ground beef, onion, red pepper & corn in a large skillet until meat is brown and onion is
tender; drain well.

Add chili powder, cumin, and salt; stir well. Cook meat mixture over low heat 10 minutes.

Spoon meat mixture into a 13- x 9- x 2-inch baking pan.

Layer beans, tortillas, and cheese over meat mixture.

Pour tomatoes with liquid over cheese.

Spread soup over top of casserole. Cover baking pan; optional refrigerate overnight.

Bake, uncovered, at 350° for 1 hour. Let sit for 10 minutes before serving.

Plop with a blob of sour cream if you dare = yum-yum….

Yield 4 to 5 servings.

Williams' Family Reunion

92 Williams' family members met in Bend, Oregon. It was beautiful and a lot of fun. Went river rafting, horseback riding, bike riding, and spent time catching up with family. The trip went by way to quick, we should have planned to stay longer. A photo of the whole group is still to come.

All is Well in Portland!

Hello everyone, just thought I'd send a quick hi! Summer has been very busy, I don't know why I'm always surprised by that, but it happens every year.


Work is going well for both Nathan and I. Loneliness does set in when Nathan has to work late though - that has been hard.


Hockey has been a lot of fun for Nathan and I've enjoyed watching. He's scored some cool goals!


Church has been amazing. We've become very involved with the youth group, which is another thing I'm completely suprised by. I told God I didn't want to help out with youth, but He thought differently and I'm so glad because it's been awesome! The Lord is doing beautiful things in the hearts of some of them and changing us in the process.


Can't believe the summer is almost at it's end. Part of me is joyful at the prospect of completing my job, but the other part has enjoyed the lack of homework. Oh well! I've missed Dad, Mom, Josh, and Caleb so much recently. They are such a wonderful, godly, encouraging, and loving family!


In many ways, starting my life with Nathan (already past 7 months!!!) has been so simple and natural. The commitment of marriage was the next step in our friendship. And it was the most wonderful step! I feel like my God has me right where He wants me, and us. We don't know every next step along the way, but we're trusting the Lord and are excited to see where He will lead us. I love sharing my heart with my husband :) He loves me and I love him back, so much! I love the beautiful reality that he and I will spend the rest of our lives together.


But with this step came the step apart from the rest of my family. I miss being home sometimes...conversations and time with Dad and Mom, and just chilling with Josh and Caleb. Those were special times and I hope there are more to come. I'm happy to be coming home for a short trip for Will and Megan's wedding (yeah guys!!!). Just hope it doesn't fly by too quickly.
