I love meatloaf & this is the best. Tested & passed Mimi’s strict specifacations.Italian Meatloaf
Serves: 4 servings
Ingredients
• 2 tablespoons
• 1 red pepper, seeded, small diced
• extra-virgin olive oil
• 1 onion, diced
• 2 teaspoons (about 3 cloves) chopped garlic
• 1 pound 85/15 ground beef
• 2 eggs
• 3/4 cup fresh bread crumbs
• 1 cup grated Parmesan
• 1 tablespoon Worcestershire sauce
• 1 tablespoon balsamic vinegar
• 2 tablespoons chopped basil leaves, or 1 dry
• 1 tablespoon chopped parsley leaves or ½ dry
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 cup store bought marinara sauce
Directions
Preheat oven to 350 degrees F.
Heat 1 tablespoon of the olive oil in a medium saute pan over medium heat and add the peppers, onions and garlic. Saute until just soft, remove to a plate and cool.
When the peppers and onions are cool, combine all of the remaining ingredients together except for the marinara. Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

BROCCOLI-CHEESE SOUP
Another recipe worthy of Mimi’s
Serves 6 to 8
1. 2 T butter
2. 2 lbs. broccoli roughly chopped
3. 1 med. Onion, roughly chopped
4. 2 garlic, minced
5. 1 ½ t. dry mustard
6. Pinch cayenne pepper
7. Salt
8. ¼ t. baking soda
9. 3 -4 cups water
10. 2 cups chicken broth
11. 2 loosely packed cups baby spinach
12. ¾ cup sharp cheddar cheese
13. ¾ cup fine grated Parmesan cheese
_________________________________________________________________________________
1. Heat butter in large pot. Add 1 – 7 & cook for about 7 minutes. Add 1 cup water & baking soda. Bring to simmer, cover & cook about 20 minutes.
2. Add broth & 2 cups water, add spinach & cook until wilted, about 1 minute. Add 12 & 13 & & process until smooth, about 1 minute.

Dessert For President Obama's Digital Dinner Made By 'Top Chef' Champ

San Francisco's Taste Catering created the menu for the President's top-secret confab with tech titans
None of the tech billionaires who attended President Obama's private dinner on Thursday evening Tweeted or Facebooked the closed-press event at the Woodside manse of Silicon Valley venture capitalist John Doerr--though Dick Costolo, CEO of Twitter, was on the presidential guest list. And Mark Zuckerberg, the founder/CEO of Facebook, was seated beside the President during the meal.

But one of the chefs who created the meal did tweet some deets: Executive Pastry Chef Yigit Pura of San Francisco's Taste Catering & Event Planning tweeted to ObFo: "my company did the meal, my team did the desserts." He also tweeted about President Obama's affection for his Banana Cream Pie (above). President Obama is a noted pie enthusiast, as is the First Lady.

Pura, who has worked in many fine restaurants, was crowned the king of Season One of Bravo TV's sweety series, Top Chef Just Desserts. Taste Catering is led by Exec Chef Chris Borges, and does all kind of high-profile events in the Bay Area. They source their ingredients locally, organically, and sustainably, according to their website.

Only one guest dishes about dinner...
So what else was on the menu? Taste's "client"--that's dinner host Doerr-- hasn't yet ok'd the release of the full menu, according to Taste's publicist Charles Zukow. The company, in keeping with privacy policies, won't announce what was served without client permission. Perhaps America will know soon. (Above: The President and the group toast at dinner)

None of the tech titans who attended the dinner went on the record about the night either, except for long-time GOP supporter John Chambers, CEO of Cisco Systems, who issued a terse statement:

"I was honored to be part of the discussion with President Obama and Silicon Valley business leaders," Chambers said. "Government and private industry must work hand-in-hand to spur innovation, strengthen our economy and get Americans back to work. Our ongoing dialogue with the administration gives us confidence that we can boost innovation and investment in America."

The rest of President Obama's dinner companions: Apple founder/CEO-on-leave Steve Jobs was also seated beside the President at dinner, and they were joined by Carol Bartz, Yahoo! President and CEO; Art Levinson, Genentech Chairman and former CEO; Steve Westly, Founder and Managing Partner, The Westly Group; Eric Schmidt, Executive Chairman and CEO of Google; Larry Ellison, Co-Founder and CEO, Oracle; Reed Hastings, CEO, NetFlix; and John Hennessy, President, Stanford University.

Lizzie Sold Her First Story

With check in hand, Liz sold her first article. We are really happy for her and so proud.

Quick Trip to Northern California

Joe and I just took a quick overnighter up to Northern California to see Jan. I just bought my first digital camera, so I thought I would try it out on our trip. We had a great time with Jan. We met her at her day program, saw her friends there and then took her to get a pedicure and out to lunch. We were also able to go to her house and talk to a couple of the staff members there. She seems to be doing well, but she has some changes coming up that will be tough. We wish we were closer to her, but the Lord is really taking care of her and overall she seems happy. We also checked up on our little rental up there. Other than a section of the backyard fence coming down, it
looks great. We stayed the night on the boat in a storm. That was exciting ! I guess it is snowing there right now. The lake is only 70 feet from the top, so it looks like it will be completely full by the summertime.

How Would Ottenweller Vote?

FORT WAYNE, Ind. — A former Indiana mayor who won over voters in the 1930s is proving less popular with modern city leaders trying to choose a name for a new government center.

Harry Baals (bawlz) is the runaway favorite in online voting to name the new building in Fort Wayne. But Deputy Mayor Beth Malloy tells The Journal Gazette that the city probably won’t name 200 E. Berry St. after its longest tenured mayor because of the jokes it could inspire. "We love Fort Wayne, too," she said told the newspaper Monday. "We're not going to make any decisions that look bad."
As of 2:30 p.m. today, the name had about 6,800 votes at www.feedbackfortwayne.org.
The Anthony Wayne Government Center had moved into second place, with 408 votes. The Eugene Johnson Memorial Center had 394 votes, Renaissance Square had 365 and The Rudisill Center had 334.


Supporters say it’s unfair that the former mayor can’t be recognized simply because his name makes some people snicker. But others say they don’t want the city to become the target of jokes.


His descendants now pronounce their last name "bales."


City spokesman Frank Suarez told the newspaper that the city has no regrets about opening the name selection up to people online.


"It is a new way of reaching out to the community," he told The Journal Gazette. "The fact that 17,000 votes have come in tell us the buzz created by this is really good. When was the last time somebody could say they had fun with their government? We've had fun with this."


Online voting ends Friday, then the mayor will choose from several finalists.

From Mimi's Kitchen

Baboon Breath Chili

You should wear a raincoat if you partake in this beauty

Cut in half to serve 5 – 12 ½ baboons

Ingredients

2 tablespoons butter
3 tablespoons bacon grease, or canola oil
2 red bell peppers, diced (about 2 cups)
2 jalapenos, minced (about 2 tablespoons)
3 Anaheim chiles, roasted, peeled, chopped
3 poblano chiles, roasted, peeled, chopped
2 yellow onions, diced (about 2 cups)
1 head garlic, minced (about 1/4 cup)
1 pound boneless chuck, trimmed and cut into 1/4-inch cubes
2 pounds ground beef, coarse grind
1 pound bulk Italian sausage
2 teaspoons granulated onion
2 teaspoons granulated garlic
3 tablespoons chili powder
2 teaspoons hot paprika
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons cayenne pepper
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 cups tomato sauce
1 cup tomato paste
12 ounces lager beer
1 cup chicken stock
2 (15.5-ounce) cans pinto beans, with juice
2 (15.5-ounce) cans kidney beans, with juice
Directions

In large stock pot over high heat, add butter and bacon grease. Add bell pepper, jalapeno, chiles and onion and cook until caramelized, about 5 minutes. Add garlic and saute a minute longer. Add chuck and brown. Add ground beef and sausage to brown and stir gently, trying not to break up the ground beef too much. Cook until meat is nicely browned and cooked through, about 7 to10 minutes. Add in granulated onions, granulated garlic, chili powder, paprika, cumin, coriander, cayenne, salt and pepper and cook for 1 minute. Add in tomato sauce and paste and stir for 2 minutes. Stir in beer and chicken stock. Add beans, lower heat and simmer for 2 hours.

She'll Be Missed

Dorothy Meyer Depew, 94 Wife, Mother, Teacher, Realtor. ESCONDIDO -- Born Chicago, Illinois, October 23, 1916, Dorothy died in Pasadena, California, on Friday, January 28, 2011, at 94 years of age. Longtime resident of Pasadena and Escondido, California, she was the matriarch of eight children, ten grandchildren and eleven great- grandchildren. She was predeceased by her husband, Joseph; and daughter, Deborah. Dor was known for her charm, exuberance, and indomitable spirit. She warmly welcomed all who crossed her threshold, and her sparkle will be missed by all who knew and loved her. A funeral Mass will be celebrated at 11 a.m., Thursday, February 3rd at St. Elizabeth of Hungary Catholic Church in Altadena. A viewing and Rosary will be held prior to Mass at the church starting at 10 a.m. The church is located at 1879 Lake Avenue, Altadena. A graveside service and burial will be held at 2 p.m., Friday, February 4th at Oak Hill Cemetery, 2640 Glenridge Road in Escondido. Donations may be made in lieu of flowers, to Father Richard Thiele, c/o Joanne Braun, 10705 Cherry Hills Drive, Cherry Valley, Calif., 92223.
