Boy is this yummy & just in time for those beautifully-sweet summer peaches:

Peach-Blueberry Pie

1 package prepared pie crusts

2 lbs. peaches, pitted & sliced

1 pint blueberries

¼ cup sugar (or fake sweetener)

½ lemon, juiced

1 ½ t. cornstarch

2 T. butter, cut into bits

1 egg, beaten with dash of water

Preheat oven to 400’. Move the oven rack to bottom 1/3rd of oven.

Toss the fruit with the sugar, lemon, and cornstarch. Line a pie dish with the 1st prepared pie crust & pour in the fruit. Dot the fruit with the butter. Cover the fruit with the 2nd crust & make 3 (2 inch) vents in the top & brush with the egg glaze.

Put the pie on a baking sheet & bake until the crust is golden brown, 50 – 60 minutes. Cool & serve with Vanilla ice cream.

DOUBLE CHOCOLATE CHIP COOKIES

1 box family size brownie mix
2 eggs
6 oz chocolate chips
3/4 c. flour
6 T. cooking oil
2 T. water
3/4 cup chopped nuts, optional

Mix by hand. Drop by teaspoonful on an ungreased cookie sheet.

Bake 300 degrees 10 minutes. Do not overbake.
Makes 6 dozen.

Beef Taco Meat # 2
This is the best filling I’ve ever made
Recipe

1 # ground beef (chili grind works great)
½ t. salt, 1 T. chili powder, ½ t. garlic powder, ½ t. cumin, 1 T. paprika, chopped onion & your choice of chopped pepper.
Cover meat with water.
Bring to boil than simmer for 1 hour. Add onion & pepper & cook for another 25 minutes.
Strain the meat into a bowl & cool. Place in freezer for a few minutes & scrape off the grease. Dissolve 1 t. of corn starch with ¼ cup water & mix into about ½ cup of boiling degreased sauce. Simmer 4 -5 minutes & fold into the meat.
