Thanks for the Birthday Wishes!

Thank you for the happy birthday calls, cards, messages, and posts. It was a beautiful birthday and you all made me feel so loved. A few freinds surprised me on Friday night when they arrived for a game night all dressed up. We had a great time visiting and playing games. They had me wear a birthday hat and served me ice cream with 21 candles. 21! Feels so strange.

You might not be aware, but our very own, Maggie Teskey, has had the pleasure of meeting two presidents in the past week. She shook the hand of Bill Clinton as he walked through the kitchen, and observed President Obama as Taste served the fund raising gathering at Marissa Mayer's home in Palo Alto. She is VP at Google.

Enjoying Hockey!

Nathan is still enjoying the roller hockey league he is in. So far his team, Magically Delicious, has won five times and lost twice. They are playing much better as a team, and Nathan already has quite a few goals of his own.
He's had so much fun playing every week and I've enjoyed watching him and getting to know other ladies who watch their men too.
Nathan's hockey games are such a fun way to get off campus, get to know other people, and enjoy something together.

Caleb's College Trip to Moody Bible Institute
















A few weeks ago we visited Moody Bible Institute in downtown Chicago. I (Mom) was a little apprehensive when Caleb set his sites on going to college in the inner city, but I have to admit I loved Chicago and more importantly we were really impressed with the school and could easily see Caleb there and loving it. The men's dorm is a 19 story building and there are underground tunnels that connect the dorms with the other buildings because of how incredibly cold it gets there. The shot from the 95th floor of the Hancock building pictures the school down below in the distance where you see several brick buildings. The college has been there for 125 years, so a lot of history. It is just a few blocks from Lake Michigan and actually in a very nice part of the city. It sure is hard to think about him being gone, but we would be excited to see him have this opportunity.

Jicama Slaw

Time: About 1 hour. Cut the vegetables at home, make the dressing, then toss everything together when you're ready to eat. Use a handheld slicer (like a mandoline or a Benriner) to make cutting the vegetables easier.

Yield: Makes 6 to 8 servings

2 carrots, peeled and julienned
1 small jicama (about 1 1/4 lbs.), peeled and julienned
1 large red bell pepper, cored and very thinly sliced
1/4 head red cabbage, cored and very thinly sliced
1/2 red onion, halved lengthwise and very thinly sliced lengthwise, rinsed, and patted dry
6 tablespoons olive oil
6 tablespoons unseasoned rice vinegar
3 tablespoons fresh lime juice
1 tablespoon minced cilantro leaves, plus more for garnish
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon sugar
1/2 teaspoon chili powder
1/2 teaspoon red chile flakes

1. At home: Put cut vegetables in a large resealable plastic bag. Keep, chilled, up to 2 days.

2. At home: Combine oil, vinegar, lime juice, minced cilantro, salt, pepper, sugar, chili powder, and chile flakes in a small resealable plastic bag or container. Keep, chilled, up to 2 days.

3. At campsite: Add dressing to vegetables, shake to combine well, and let sit 15 minutes, stirring 2 or 3 times. Serve garnished with cilantro, if you like.
