BROCCOLI-CHEESE SOUP
Another recipe worthy of Mimi’s
Serves 6 to 8
1. 2 T butter
2. 2 lbs. broccoli roughly chopped
3. 1 med. Onion, roughly chopped
4. 2 garlic, minced
5. 1 ½ t. dry mustard
6. Pinch cayenne pepper
7. Salt
8. ¼ t. baking soda
9. 3 -4 cups water
10. 2 cups chicken broth
11. 2 loosely packed cups baby spinach
12. ¾ cup sharp cheddar cheese
13. ¾ cup fine grated Parmesan cheese

1. Heat butter in large pot. Add 1 – 7 & cook for about 7 minutes. Add 1 cup water & baking soda. Bring to simmer, cover & cook about 20 minutes.
2. Add broth & 2 cups water, add spinach & cook until wilted, about 1 minute. Add 12 & 13 & & process until smooth, about 1 minute.
