Another keeper
Spaghetti & meatballs
Serves 4 (freeze the left-over’s)
Forget the pre-cooked store bought balls, try these.
1) S&P
2) ¼ cup grated parmesan cheese + more for serving
3) 2 minced garlic cloves
4) 1 egg
5) 1 lb. ground beef (I combined beef & Italian sausage)
6) ¼ cup dried bread crumbs
7) 1 T. olive oil
8) 1 28 oz. can crushed tomatoes in puree (try processing onion & a pitch of basal with the sauce)
9) Spaghetti
Combine 1 thru 6 & form into approx. 16 balls.
Heat the oil & cook balls till browned, about 8 – 10 minutes. Add tomatoes, bring to a boil. Reduce to a simmer & cook partially covered till cooked through, about 10 – 12 minutes. Serve with pasta sprinkled with parmesan & minced parsley.

Nathan, Cody (his brother), and Andrew (their friend) came up to Portland for the weekend. It was Cody's 18th birthday, so the rest of us decided to surprise him by taking him to a hockey game. So now I've been to three...kinda funny since I'm not a huge sports fan :)

Hockey Game

Some of my friends and I were able to get free tickets to a semi-professional hockey game. The game was located in a stadium called the Rose Garden, which is where the Trail Blazers play (professional basketball team). I may go to a Trail Blazers vs. Lakers game in April...I feel kind of bad going without Josh and Caleb!!!
