I made Jeanette’s famous cheesecake for Easter & sharing it again with Mimi’s Kitchen fans. Add some berry’s on top if you wish & I used fake sugar if you keeping track of that kind of thing…….your E & C – me.
Jeanette’s Ricotta cheesecake
Ingredients
For the crust-
Combine:
1 c. graham cracker crumbs
1/3 c. hazelnuts, toasted & ground
¼ c. sugar
6T. unsalted butter, melted
For the filling-
Blend; mix in:
2 pkgs. Cream cheese, room temp.
2/3 c. sugar
15 oz. whole milk ricotta cheese
3 egg yolks
2 eggs
¼ c. fresh lemon juice
3 T. all-purpose flour
1 T. lemon zest, minced
1 t. vanilla extract
½ t. salt
Preheat oven to 400’, coat a 9” springform pan with nonstick spray.
Combine ingredients for the crust in a bowl until moist. Press mix. into bottom of the pan & 1” up from sides. Bake 8-10 mins. or until golden; cool completely. Reduce oven to 300’.
Blend cream cheese & sugar in a large bowl with a mixer until smooth. Mix in ricotta; add yolks & eggs one at a time, blending well after each addition.
Add remaining ingredients.
Pour batter into cooled crust & bake 1 hour, or until edges are set & slightly puffed, but the center is still jiggly (do not overbake). Turn oven off & crack the door open with a wooden spoon; leave cake in the oven for 1 hour. Remove & cool to room temp., than chill overnight, covered with a cotton towel.

Visit to Portland
Last weekend was the first time my mom had been up to Portland since Nathan and I were married. We had a fantastic time together and she was able to see our apartment for the first time.
The married-student apartments are located directly across the street from Multnomah's campus. Our studio apartment is on the back side of the building (not by the road) and up the stairs. We love our location.
Mom and I went thrift store shopping while she was here. We found some fun treasures: a vintage-looking globe lamp and a large picture for over the bed.
I was so glad that Mom came in the spring time. This is the campus (right across the street) and the little pathway is the way I walk to school everyday.
We had such a fun time together -- Thanks Mom!

POP'S TOP TEN
Okay, so it's not really pre-school, but kind of a pre-pre-school. But for Carson ..... it was the real deal! Anne & Robby wanted a little test for the "Tarst" before sending him off to a full year of pre-school. Pops gives us the TOP TEN "things" about his first day.
- Pulled the fire alarm
- Asked when we get to dissect a frog
- Told Ms. Dora Lou that his grand pops also had a bottle of Jack Daniels in his drawer
- Said his brother Owen told him that half the stuff teachers say is made up
- Was the only boy in his class. (You know that kid that every one picks on? He's not the one)
- One of the girls, Grace, told him that her brother said we can get extra credit if we help wash Ms. Dora Lou's car
- Wondered who was gonna wipe his behind if he went potty
- Thought the chalk was delicious
- Could not stop saying "No thank you"
- Actually, just kind'a sat there

SOMEWHERE IN TIME
Twenty one years ago mom passed away on April 1st; dad a few years later on April 2nd. Kelly said that that year was a Leap year and so they both departed on April 1st. Whatever? well miss them very much.
