Presenting: Doug’s Magnificent Minestrone
Just in time for the cold holiday nights, enjoy!
¾ cup uncooked small shell pasta
1       T. olive oil
4 – 8 oz. Italian turkey or pork sausage
1 cup diced onion
1 cup diced carrot
½ cup diced celery
2 T. chopped parsley or cilantro
2 t. fresh thyme or mixed dry Italian seasonings
¼ t. crushed pepper
5 chopped garlic cloves
1 15 oz. can undrained diced tomatoes, or fresh peeled & squeezed
1 15 oz. can chickpeas, drained & rinsed. These are really yummy
4 cups chicken stock
S & P
OPTIONAL: parmesan cheese rind, substitute any tomatoes you have.
1)    Cook pasta,2) cook sausage with oil until lightly browned. 3) Add onion & next 6 ingredients & cook 10 minutes. 4) Add chickpeas, tomatoes & stock; bring to boil & simmer 5 minutes. 5) Stir in pasta, S & P to taste. Keep warm until ready to indulge.
Serves 6.
