Presenting: Doug’s Magnificent MinestroneJust in time for the cold holiday nights, enjoy!¾ cup uncooked small shell pasta1 T. olive oil4 – 8 oz. Italian turkey or pork sausage1 cup diced onion1 cup diced carrot½ cup diced celery2 T. chopped parsley or cilantro2 t. fresh thyme or mixed dry Italian seasonings¼ t. crushed pepper5 chopped garlic cloves1 15 oz. can undrained diced tomatoes, or fresh peeled & squeezed1 15 oz. can chickpeas, drained & rinsed. These are really yummy4 cups chicken stockS & POPTIONAL: parmesan cheese rind, substitute any tomatoes you have.1) Cook pasta,2) cook sausage with oil until lightly browned. 3) Add onion & next 6 ingredients & cook 10 minutes. 4) Add chickpeas, tomatoes & stock; bring to boil & simmer 5 minutes. 5) Stir in pasta, S & P to taste. Keep warm until ready to indulge.
