VEAL OR CHICKEN SCALLOPINI WITH MUSHROOM
MARSALA SAUCE
1/3 cup flour
About 1 tsp. each salt & pepper
1 tsp. Dried oregano
1 lb. Veal cutlets, pounded to about 1/4" thick
2 tbsp. Olive oil
3 tbsp. Butter
12 oz mushrooms, sliced
3 tbsp. Chopped garlic
2/3 cup sweet Marsala wine
½ cup each beef broth and whipping cream
1. In a bowl, combine flour, 1 tsp each salt & pepper, and the oregano. Lightly dust veal with flour mixture and set on a plate.
2. Heat olive oil in a large frying pan over medium heat, working in two batches, brown veal in oil, turning once, about 4 minutes. Transfer to plate.
3. In the same pan, melt butter, than add the mushrooms and garlic; saute five minutes. Add Marsala and broth. Cook over high heat until slightly reduced, 5 minutes. Add cream and salt & pepper to taste. Return to a boil. Pour sauce over veal. Serve with sauteed spinach and mashed potatoes.

This last weekend...
...was Nathan's birthday.He drove up and we went to see the Winterhawks play hockey in the Rose Garden in Downtown Portland (they are a semi-professional team).
The Winterhawks lost the game pretty bad, but we still had a super awesome time and I learned quite a bit more about hockey.
On a side note, this week is finals week. My newswriting final was this morning and then I have several more throughout the week before I fly home on Friday night--can't wait to hopefully see you all soon!

"TWO YUMS UP"
BEEF & CARROT STEW
3 servings1 T. peanut oil1-1/2 lb. beef chuck cut into 1 ½ pieces1 cup chopped onions2 crushed garlics2 t. fresh rosemary1 T. tomato paste1 T. flour½ of a 12 oz. bottle stout beer8 oz.’s beef broth½ lb. carrots cut into 1” piecesOver med . high heat,heat oil, sprinkle beef with S&P & sauté till browned, about 8 minutes. Transfer to bowl. Reduce heat & add Onions, garlic & herb to pot. Sauté till onions start to brown, about 5 minutes. Add tomato paste & flour & stir 1 minute. Add beer; stir till thick, about 2 minutes. Add broth, then beef & bring to simmer. Partially cover pot & simmer 45 minutes. Add carrots & continue simmering partially covered until beef & carrots are tender, about 45 minutes.Notes from your E&C: you can add just about any veggie you like; potatoes, beets, etc. goes great with corn torts or French bread…

POP'S TOP TEN
Anne and Robby are on their way to the "Ritz Carlton" Jamaica for a week of R&R. Pop's gives us the "TOP TEN" reasons Anne needed a vacation
- She was choking on pretzels just so she could pass out for a few minutes
- Barely has the energy to help Regan, make the beds, pick up the rooms, clean the bathrooms, wash and iron the clothes, fix dinner, breakfast, lunch and change Owen's diapers
- Started nodding off during home-schooling
- #1 item on "To Do" list......."Need Nap"
- It's been, what, two months since Japan?
- Had Robby remove toys from play room....... to make room for the hammock
- Only thing Anne and Robby are arguing over lately is margaritas vs daiquiris
- Shopping list are written on the back of the Ritz Carlton brochure
- Was asking kids to behave themselves till Christmas
- Stands outside the house all day screaming "Help!!!!"

First Night In Ireland

My kids still being kids on halloween
The church had a great time on Halloween. We set up what we call the Gospel Barn at a home of one of our church members. The kids come by and watch a fun puppet show, hear a story about Jesus using carved pumpkins and we give out candy (of course) and coffee and hot chocolate to the parents. It's a lot of fun and the children always look for the "gospel Barn" each year when they are trick-or-treating. Josh and Caleb, along with their friends Angie and Lianna, dressed up like the Scooby Do gang. They really pulled it off and got a lot of laughs.
Downtown Portland...
I went to downtown Portland yesterday to visit the Portland Art Museum with my friends Monica, Carolyn, and Hannah (my roommate). It was a nice sunny day and so it was very pleasant to walk around. We got a little turned around and headed in the wrong direction a time or two, but we finally found our way and enjoyed the museum and our time together!

Mid-semester break...
I spent last weekend in Coos Bay, OR with Nathan. My mid-semester break
came around and so we were able to have four nice days together.
These pictures were taken when we went on a little hike.
There were two beautiful waterfalls and the trees were amazing!
I love it here. The fall colors have just started to come out!
