From Mimi's Kitchen
Tested & approved for Mimi’s Kitchen:
Cottage Pie
I love casseroles because you can prepare them ahead of time; than simply throw them in the oven when guests arrive..
Serves 6
- 3 tablespoons unsalted butter, melted
- 1 large yellow onion, diced medium
- 2 large carrots, cut into 3/4-inch pieces
- Coarse salt and ground pepper
- 2 tablespoons tomato paste
- 1 pound ground beef or lamb
- 2 teaspoons fresh thyme leaves
- 1 cup dark (porter) beer
- 2 tablespoons all-purpose flour
- 3/4 cup frozen peas
- 1 large russet potato (3/4 pound), very thinly sliced
Directions
1. Preheat oven to 400 degrees. In a large skillet, heat 1 tablespoon butter over medium-high. Add onion and carrots and cook, stirring often, until onion is soft, 5 minutes. Season with salt and pepper and stir in tomato paste. Add meat and cook, breaking up with a wooden spoon, until almost cooked through, 3 minutes. Add thyme and beer and bring to a boil. Cook, stirring frequently, until slightly reduced, 2 minutes. Sprinkle flour over mixture and stir to combine. Add 1 cup water and cook until mixture thickens, about 2 minutes. Stir in peas and season with salt and pepper.
2. Transfer mixture to a 2-quart baking dish. Top with potatoes, overlapping slices. Season potatoes with salt and pepper and drizzle with 2 tablespoons butter. Bake until potatoes are browned around edges and tender when pierced with a knife, 40 to 45 minutes. Let cool 10 minutes before serving.

- Use an oven mitt

- Double if pliers are used
- Takes place in kitchen while mom's fix'in dinner
- Try doing it with a mouth full of spaghetti
- Just before tooth is pulled - scream - "Let's get ready to rumble!"

A Story Online
I wrote an assigned story about bedbugs for Mulntomah's school paper. While it wasn't a particualry intriguing topic, it was worthwhile because a women in my article writing class used the story on her business' blog to promote the sale of her product--her buisness is called Essential Wholesale.

Pops, Mimi, Ted & Jane spend a morning with Dennis Prager
The new Lexus dealer in town is magnificent to say the least. They kicked-off their new dealership with an invite to talk-show host, Dennis Prager, to broadcast from the dealership. Lunch and a talk by Dennis followed.

Whew! it's over
Ever notice that Oak Valley is never kind. Oh, it's a beauty, and always on every one's Top Ten list, but it's never kind. We've seen fires in the foothills, snow on the ground, rain, wind, and dust that looked like fog. Maybe it's the altitude and the Gorgornio pass? Whatever, yesterday Bob Phillips was the lone survivor with a winning score of 2-over par (74). The rest, they were just glad it was over!
You'd of thought Bob might have the opportunity to take some of the two-ball cash, nope, the team of Colsant and Tagge had that pleasure. Joe and Dave posted scores of 75/77 and took all the loot.
